And the Winner is….

» Posted on December 10, 2009

Thank you everyone who posted a comment!  That was great and I am glad everyone likes the new blog, I am still working on the photos, I hear they show up tiny on google reader, I’m looking into it..

And now for the moment you have all been waiting for, but first a brief description of the process, it was quite archaic and I am sure there was some fance way of doing it via internet that I don’t know about, but I wrote all the names down on slips of paper, folded them, put them in a bowl and let Paige choose and the lucky winner is….

ERICA WILLIAMS!!!    Erica is the beautiful mother of three adorable boys, she also does hair which is how we met, she is a great cook (I make her creamy chicken and wild rice soup recipe all the time) and her husband was the coach of Paiges t-ball team last spring.   Erica also happens to be the star of a little story I like to refer to as “the bee incident of ’08, so I am happy to present her with a little prize, cuz readers, she has earned it!!

That was a lot of fun, I think I will make the contest a regular event here on the blog, so be sure to stop in regularly for your chance to win!!

For Elise (and Carrie the next time she looses it!):
Creamy Chicken and Wild Rice Soup Recipe
    4 cups chicken broth
    2 cups water
2 cooked, boneless chicken breast halves, shredded
1 (4.5 ounce) package quick cooking long grain and wild rice with seasoning packet
    1/2 teaspoon salt
    1/2 teaspoon ground black pepper
    3/4 cup all-purpose flour
    1/2 cup butter
2 cups heavy cream (Regular whipping cream or half and half are great in this recipe too.)

1.In a large pot over medium heat, combine broth, water and chicken. Bring just to boiling, then stir in rice, reserving seasoning packet. Cover and remove from heat.
2.In a small bowl, combine salt, pepper and flour. In a medium saucepan over medium heat, melt butter. Stir in contents of seasoning packet until mixture is bubbly. Reduce heat to low, then stir in flour mixture by tablespoons, to form a roux. Whisk in cream, a little at a time, until fully incorporated and smooth. Cook until thickened, 5 minutes.
3.Stir cream mixture into broth and rice. Cook over medium heat until heated through, 10 to 15 minutes.

ALSO: I forgot to say that I like to add cooked chopped celery and carrots to the soup. It makes it even better!

Thanks Erica! I always have to take the time to find it on your blog because i am too lazy to print it off and put it in my giant disorganized binder of delicious recipes!
